Kai took the red beans and sprinkled them evenly into the ginger juice. Without hesitation, he grabbed the hot pot and, to everyone's astonishment, poured the steaming milk into the ginger juice and red beans.

The success of this Cantonese dessert depended on the milk's temperature, the ginger juice's consistency, and the steeping time. Any mistake would ruin the flavor.
