Su Yu was worried they'd cut the pieces too large, preventing the broth from soaking in and flavoring the meat. After finishing the water in her cup, she walked over to Shi Wei, who had just brought out a slab of meat. She gestured on the slab to indicate the size. "Cut them to about the size of my palm."
"Not too thick. A bit thinner, or the broth won't soak in and flavor it properly."
As she spoke, Su Yu gestured to show the desired thickness of the slices.
