The Eating ability has many limitations, and to use it, two conditions must be met: "the enemy must be dead" and "the enemy must not have subjective resistance."
But don't Alef Creatures' Karma Remnant Buddha perfectly meet these two conditions?
It has never been considered a living being but rather a killing program similar to a mechanical device. The entire statue is at the boundary of life and death, with no such thing as "living," just like the Corpse Lake itself.
Moreover, although it can unleash Immeasurable Calamity to infinitely cut through all surrounding matter, that's not considered its "subjective resistance," so it can't be counted against it.
